    Summer is in full swing and temperatures are reaching record-breaking highs. What better way to spruce up your favourite sunny day recipes than with our favourite herb, cannabis. From cannabis ice cream to infused Mexican sweet corn, these delicacies are better enjoyed by a pool or lake on a beautiful day.

    Cannabis Ice Cream

    I’m going to start off strong with my favourite summer treat, ice cream. This creamy dessert (or main course) has a special ingredient, cannabis! This recipe is a bit more complicated so I would consider it for a more intermediate home chef.

    Ingredients:Cooking with Cannabis
    -2 grams cannabis of choice. Try to stay away from indica strains that will leave you feeling heavy throughout the rest of your day if you eat this before planning to sleep
    -500 ml of heavy cream
    -2 tbsp butter or olive oil
    -75 grams of sugar
    -2 ripe bananas
    -1 pinch of salt
    -5 tbsp honey
    -2 tbsp rum
    -Fun ingredients to take this recipe to the next level (I used blueberries and vanilla but the opportunities and combinations are endless!)

    Decarboxylate:

    The first step to any cannabis concoction is decarboxylating your flowers. This step is easy to
    do but ensures that all of that good THC you need is active. Simply break down the flower and
    spread it onto a baking sheet before putting it in the oven at 250 for 25-30 minutes. After it has
    cooled down you are ready to start on the ice cream!

    Instructions:

    1. In a thick-bottomed pot heat the cream over medium heat, stirring slowly. Add the butter, salt, and sugar. Make sure to keep stirring!
    2. Once all of your ingredients are melted and thoroughly stirred, it’s time to grind up your cannabis. Once it’s powder-fine it can be added to your cream mixture.
    3. Add in your mashed banana, honey, and rum. Stir, stir, stir.
    4. Blend everything until smooth with a hand blender.
    5. Pour your mixture into a freezer-safe container. This is where the fun part happens! Add any extra ingredients to your creation, this is when I added my blueberries.
    6. Freeze for at least 4 hours before eating.

    Cannabis-Infused Mexican Street Corn

    This traditional street food is mouth-watering grilled corn smothered in mayonnaise, cheese, and lime. For our infused recipe we will be making spicy butter packed with THC. These luxurious yellow cobs would be the perfect addition to a backyard BBQ.

    Ingredients:Cooking with Cannabis

    -10 ears of corn in husks
    -1 cup cotija cheese
    -1 lime
    -1 cup butter
    -2 grams of cannabis
    -1/2 tsp paprika
    -1 tsp salt
    -1/2 tsp cumin
    -1/2 tsp cayenne
    -1/2 tsp chipotle powder
    -1/2 tsp garlic powder

    Making Your Cannabis Butter:

    1. Start by decarboxylating your cannabis which I detailed in the above recipe. 
    2. Melt your butter on the stovetop with 1 cup of water.
    3. Add in your 1 cup of ground, decarboxylated marijuana, and simmer. Keep the heat low, lightly simmering for 2-3 hours. Stir occasionally. 
    4. Once the butter has cooled pour it through a cheesecloth to remove the pieces of cannabis throughout. 
    5. Refrigerate your final product in a jar. If any water separates, pour it out. We only want the infused butter.
    6. Add all of your spices to the cold butter in a food processor.

    Grilling The Corn:

    1. Grill your corn on high heat with the husks still on. When every side of your husk is blackened it’s ready to be taken off.
    2. Peel your corn and top with your spicy cannabis butter.
    3. Roll your buttered corn in the cotija cheese and squeeze with lime. I like to add chilli flakes and cilantro for an extra kick.

    Fish Tacos With Cannabis Salsa

    To me, fish tacos are the food of summer. Some of the best days are ones spent on the beach with a tortilla full of freshly caught fish. 

    Ingredients:Cooking with Cannabis

    – 1 large piece of fish. This can be whatever is seasonal or caught in your area although salmon and fluffy, white fish works best. Right now in BC, it’s spring salmon season, so that’s what I will be using for mine.
    – 8 corn tortillas
    – 1 tsp salt
    – 4 tbsp cannabis oil
    – 1 whole lime, juiced
    – 1tsp each: chilli powder, paprika, garlic powder, cumin.! 
    – 1/4 tsp cayenne
    – 2 medium ripe avocados, cubed
    – 2 medium mangoes, cubed
    – 1/2 smaller red onion
    – 1/2 cup sour cream
    – Jalapeños
    – Cilantro

    Instructions:

    1. Preheat oven to 150. Start by splitting the salt, oil, and lime juice into 2 separate halves.
    2. In a small bowl, mix all of your spices together with 1/4 tsp salt and 2 tbsp cannabis oil. Marinate your fish in this mixture for at least 5 minutes.
    3. In another bowl assemble your salsa. Mix the avocado, mango, red onion, cannabis oil, and 1 tsp lime juice.
    4. Sear your marinated fish in a cast iron pan on medium heat and sear for about 8 minutes until golden brown. 
    5. In another bowl mix sour cream with remaining lime juice and salt to drizzle on the finished product.
    6. Bake tortillas in the preheated oven for 5 minutes.
    7. Now to assemble or delicious treats! Add the salmon and salsa to the corn tortillas. Drizzle with the sour cream and top with cilantro. This recipe is best enjoyed with your favourite tequila.

    Cannabis Hummus

    Hummus is the best pairing for veggies or crackers no matter the time of year. This snack is perfect for any chickpea lover that wants to lay back and relax while they snack.

    Ingredients:Cooking with Cannabis

    – 2 cans drained chickpeas
    – 2 cloves garlic
    – 1/4 cup extra virgin olive oil
    – 1 lemon, juiced
    – 2 tbsp THC oil
    – Cumin, pepper, paprika, salt to taste
    – 1/4 cup tahini

    Instructions:

    1. Put everything in a food processor.
    2. Top with olive oil and paprika
    3. Serve!

    Despite this, it’s best to store candy and gummies in a cool, dry place. Don’t let them get too hot or they will melt! Air temperature and exposure to oxygen can affect their texture.

    Sweet edibles, such as caramels, tend to absorb moisture. This can make them soft and stick together over time. Keep caramels locked in an airtight container in a cool place in your pantry.

    There is no wrong way to enjoy CBD in your daily life but these summer sippers will make your mouth water. From beginner to intermediate recipes you may want to work your way up to, I have a recipe for every sunny occasion.

    Lavender Lemonade

    This fragrant, refreshing drink is incredibly simple to put together. If you’re a beginner then this recipe is for you! (Even if you’re a gourmet genius this drink will take seconds and impress any guests).

    Ingredients:cbd infused sippers

    -1/4 cup Dried or Fresh Lavender Blossoms (fresh lavender will give your mocktail a deeper
    purple colour)
    -2 Lemons, around 6tbsp lemon juice
    -1/4 cup Raw Honey to taste (or any natural sweetener you have in the kitchen)
    -CBD Oil or Tincture
    -3/4 cup Water
    -Top with Water or Soda
    -Ice to Finish

    Instructions:

    1. We are going to start by making a delicious, lavender simple syrup. Bring 3/4 cups of water
    to a boil and then remove from the heat. Mix the lavender and honey into your hot water.
    Steep everything for 12-14 minutes minimum or longer if you want to really want the
    lavender to be the star of this drink. Strain through a mesh strainer and you have your
    syrup!
    2. In a cocktail shaker combine your syrup, lemon juice, CBD, and ice. If you don’t have a
    shaker a large mason jar with a lid works perfectly. Shake until chilled and pour into your
    cups.
    3. Top with your water or soda water.
    4. Garnish with a lemon slice and lavender.

    Make sure this mocktail is served nice and cold, I like ice so I usually add more at the end. This pairs well with light summer dishes but can also be enjoyed alone.

    Iced Hibiscus Tea CBD Mocktail

    This is one of my favourite drinks to enjoy in the backyard by the BBQ. It is refreshingly fruity while being smooth and creamy- what more could you ask for?

    Ingredients:

    -Hibiscus Tea Bags or Loose Leaf
    -CBD Oil or Tincture
    -4 Ounces Oat Milk
    -1 tsp vanilla Extract
    -1 tbsp Fresh Lemon Juice
    -1 tbsp Honey

    Instructions:

    1. Take your hibiscus tea and honey then steep the tea until it’s cool. Either pull your teabag
    out or strain it if you used loose leaf.
    2. Add your CBD, oat milk, vanilla, and lemon into a cocktail shaker or hard with lid and shake,
    shake, shake.
    3. When your drink is frothy it is ready. Pour over ice, garnish with hibiscus leaves, and a
    cinnamon stick.

    CBD Pineapple Mule

    Moscow mules are one of my favourite patio drinks with the spicy sweetness of each sip. The addition of pineapple just gives it that extra tropical feeling that would be perfect on the beach.

    Ingredients:cbd infused sippers

    -3-4 Cucumber Slices
    -Fresh Mint
    -CBD Oil or Tincture
    -1 tbsp Honey
    -Pineapple Juice
    -Ginger Beer
    -1 tbsp Lime Juice

    Instructions:

    1. Start by muddling your cucumber and mint together. If you don’t have a muddler at the end of
    a wooden spoon works just as well.
    2. Add honey, lime juice, CBD oil, and pineapple juice.
    3. Add everything into a shaker or a jar with a lid and shake up with ice.
    4. Pour into a glass and top with ginger beer. Garnish with mint and a pineapple wedge.

    Watermelon Cucumber Virgin Mojito

    Refresh and relax with the most classic patio refresher, the mojito. With this little twist of watermelon and cucumber, you may even like it better than the original.

    -1/4 cup Cubed Watermelon
    -Fresh Mint
    -3 Slices Cucumber
    -Sparkling Water
    -Sweetener of Choice
    -CBD Oil or Tincture

    Instructions:

    1. Muddle Watermelon and Mint in a glass until everything is smashed together.
    2. Fill your glass of muddled fruit and herbs with ice.
    3. Add your sweetener, cucumber, and CBD.
    4. Top up the glass with soda water and stir thoroughly.
    5. You’re ready to quench your thirst and relax.

    Orange Mango CBD Smoothie

    Ingredients:

    -1 cup Freshly-Squeezed Orange Juice
    -2 Large Mangoes (This works best if they’re frozen)cbd infused sippers
    -1/2 cup Canned Coconut Milk
    -CBD Oil and 2 cups of ice

    Instructions:

    1. This recipe is nice and easy, making it the perfect addition to your existing daily routine.
    Add all of the ingredients into your blender and puree until smooth.

    • 1 tbsp Shea Butter
    • 1/3 cup Beeswax
    • 1/3 cup Olive Oil

    Instructions 

    1. Get your handy, double boiler ready again since we want to avoid direct, high heat.
    2. Add your beeswax into the double boiler until melted, then turn the heat to low.
    3. Stir in 1.5 cups of your cooled and strained cannabis oil and olive oil.
    4. Once melted, add the essential oils and shea butter.
    5. Once everything is melted and mixed take off the heat and transfer your concoction into your containers.
    6. Once it has hardened, the salve is ready to use! Apply to the affected area and you should begin to feel relief with 5-20 minutes. Apply throughout the day as often as needed.

    CBD Pain Cream

    Topical CBD Remedies To Fight Pain!This is another fairly easy recipe to create making it perfect for every experience level. Unlike the CBD salve, you don’t need to make your own cannabis oil to make this cream. If you decided to buy CBD oil or isolate this is the recipe for you.

    Ingredients

    • 4oz Coconut Oil

    • 4 tbsp Magnesium Oil (Magnesium chloride is a good substitute as it comes in soluble flakes)
    • 20 drops Essential Oil
    • 15-25 mg CBD

    Instructions

    1. Use a double boiler to slowly heat your mixture.
    2. Let the water start to boil and then add coconut oil and shea butter into the top bowl. Turn off the heat after melted. 
    3. Add your magnesium of choice and let cool.
    4. Essential oils of your choosing can now be added to the mixture.
    5. Store everything in containers and apply when needed.

    Will These Recipes Leave Me Reeking of Cannabis?

    This will depend on which recipe you decide to go with. A salve with homemade cannabis oil will have a slightly skunky odour. If the essential oils aren’t enough to cover the cannabis smell then I suggest a cream with the addition of CBD distillate. The oil and distillate will leave no trace of unwanted smells lingering on the skin.

    How Long Will They Last?

    As long as you store your pain-relieving creations in sealed containers in a cool, dark space they should last up to a year. If you do end up holding on to these products for that long just remember that the potency decreases as time goes on. Try to keep your unwashed hands out of the jar to dissuade it from becoming contaminated and begin to mould before it’s time.
